  • 4 ounces (115g) cream cheese, softened
  • 1 cup (120g) powdered sugar, sifted
  • 2 tablespoons milk (whole or 2%)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. In a medium bowl, sift together flour, cocoa powder, baking powder, baking soda, salt, and sugar. Whisk to blend evenly.
  2. In a separate large bowl, whisk buttermilk, egg, melted butter, vanilla extract, red food coloring, and white vinegar until smooth.
  3. Pour dry ingredients into wet mixture and gently fold with a spatula until just combined. Batter will be thick and vibrant red. Rest for 5 minutes.
  4. Heat a non-stick skillet or griddle over medium heat (about 375°F). Lightly grease with butter or oil.
  5. Pour 1/4 cup batter per pancake onto skillet. Cook 2-3 minutes until bubbles form and edges look set. Flip and cook 1-2 minutes more until cooked through.
  6. While pancakes cook or rest, beat cream cheese with powdered sugar, milk, and vanilla extract until smooth and pourable, adding milk gradually.
