A quick and easy grilled pineapple recipe coated with a cinnamon sugar butter glaze, perfect for summer BBQs and sweet treats.

Ingredients

Scale
  • 1 medium fresh pineapple, peeled, cored, and cut into 1-inch thick rings or wedges
  • 3 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon freshly squeezed lime juice (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • A pinch of salt

Instructions

  1. Peel, core, and slice the pineapple into 1-inch thick rings or wedges, aiming for uniform pieces.
  2. In a mixing bowl, combine granulated sugar, ground cinnamon, ground nutmeg (if using), and salt. Stir in melted butter and lime juice until well mixed.
  3. Using a basting brush, generously coat each pineapple slice with the cinnamon sugar butter mixture. Set aside any leftover mixture for basting during grilling.
  4. Preheat the grill to medium-high heat (around 375°F). Lightly oil the grates to prevent sticking.
  5. Place the pineapple slices on the grill and cook for 3-4 minutes per side, basting occasionally with the leftover cinnamon butter. Watch closely to avoid burning the sugar.
  6. Check for golden brown caramelized grill marks and a tender but firm texture.
  7. Remove from the grill and serve warm immediately, or at room temperature.

Notes

Use ripe but firm pineapple for best grilling texture. Watch the grill temperature closely to prevent sugar from burning. For a vegan version, substitute butter with coconut oil and granulated sugar with coconut sugar. Canned pineapple can be used but fresh is preferred. Leftovers can be refrigerated for up to 3 days and reheated gently.
