  • 1 package (3 oz / 85 g) flavored gelatin mix (cherry, strawberry, or watermelon)
  • 1 cup (240 ml) water, divided
  • 1/4 cup (50 g) sugar
  • 2 tablespoons (30 ml) fresh lime juice
  • 2 tablespoons (30 ml) honey
  • 12 tablespoons finely chopped fresh or jarred jalapeño slices
  • 1/2 cup (120 ml) vodka or silver tequila
  • Optional garnish: mini red chili flakes or edible glitter

Instructions

  1. Pour 1/2 cup (120 ml) cold water into a small bowl. Sprinkle the unflavored gelatin evenly over the surface. Let it sit for 5 minutes to bloom.
  2. In a medium saucepan, bring the remaining 1/2 cup (120 ml) water to a gentle boil. Remove from heat, add the flavored gelatin mix and sugar, whisking until fully dissolved (2-3 minutes).
  3. Add the bloomed unflavored gelatin to the hot flavored mixture, stirring briskly until completely melted and smooth. Warm gently if needed but do not boil.
  4. In a small bowl, combine honey, fresh lime juice, and finely chopped jalapeño slices. Stir well and let sit for 5 minutes to infuse. Strain jalapeño bits if a milder heat is desired.
  5. Mix the spicy sweet syrup into the gelatin mixture, then fold in the vodka or tequila carefully to keep the mixture smooth.
  6. Quickly pour the mixture into silicone molds or mini muffin tin cups before it starts to set.
  7. Refrigerate for at least 4 hours or preferably overnight until the shots hold their shape and jiggle slightly.
  8. Gently unmold the jello shots and garnish with mini red chili flakes or edible glitter.
  9. Serve chilled and keep refrigerated until serving.

Notes

Blooming the unflavored gelatin is essential for the perfect texture. Adjust jalapeño quantity to control heat. Chill for at least 4 hours to ensure firmness. Use silicone molds for easiest removal. For a milder version, strain jalapeño bits after infusion. Non-alcoholic versions can be made with sparkling water or ginger ale.
