  • 4 large flour tortillas (10-inch, soft and pliable)
  • 1 cup shredded lettuce (romaine or iceberg)
  • ½ cup diced celery
  • ¼ cup sliced green onions (optional)
  • Hot sauce, for drizzling (optional)

Instructions

  1. In a large bowl, combine shredded cooked chicken with melted butter, buffalo sauce, garlic powder, smoked paprika, salt, and pepper. Toss well until evenly coated. Add a splash of water or extra buffalo sauce if needed to loosen the sauce.
  2. In a small bowl, whisk together blue cheese crumbles, mayonnaise, sour cream, lemon juice, Worcestershire sauce, salt, and pepper until thick but spreadable. Mash blue cheese or pulse briefly for smoother texture if desired.
  3. Wash and shred lettuce, dice celery, and slice green onions. Set aside.
  4. Warm tortillas in a skillet over medium heat for about 20 seconds on each side or microwave wrapped in a damp towel for about 15 seconds to make them pliable.
  5. Lay a warm tortilla flat. Spread 2 tablespoons of blue cheese dressing down the center. Add about ½ cup buffalo chicken, then a handful of shredded lettuce, diced celery, and sliced green onions. Drizzle extra hot sauce if desired. Fold sides in and roll tightly from the bottom up.
  6. Serve immediately or wrap tightly in foil or parchment paper for later. Keep dressing separate if making ahead to avoid sogginess.
