Instructions

  1. Make the Cookie Dough (15 minutes): In a large bowl, beat together 1 cup softened unsalted butter and 1 cup granulated sugar until creamy and fluffy, about 3-4 minutes. Add 1 large egg and 1 teaspoon vanilla extract; mix until combined.
  2. Mix Dry Ingredients: In a separate bowl, whisk together 2 ½ cups all-purpose flour, ½ teaspoon baking powder, and ¼ teaspoon salt. Slowly add the dry ingredients to the wet mixture, blending on low speed until the dough just comes together. It will be soft but not sticky.
  3. Press Dough into Pan (5 minutes): Line a 9×13-inch rimmed baking sheet with parchment paper. Press the cookie dough evenly into the pan, creating a uniform layer about ¼ inch (6mm) thick. Use your fingers or a spatula to smooth out the surface.
  4. Bake the Crust (12-15 minutes): Preheat your oven to 350°F (175°C). Bake the crust until lightly golden around the edges and set in the middle. It should smell buttery and sweet. Remove from oven and let cool completely on a wire rack.
  5. Prepare Yogurt Topping (5 minutes): In a medium bowl, stir together 2 cups plain Greek yogurt, 3 tablespoons honey, and 1 teaspoon vanilla extract until smooth and creamy. Taste and adjust sweetness if desired.
  6. Assemble the Pizza (10 minutes): Once the cookie crust is completely cool, spread the yogurt mixture evenly over the surface using an offset spatula. Arrange the sliced strawberries, blueberries, and kiwi in a patriotic pattern.

Notes

Cool the cookie crust completely before spreading yogurt to prevent melting and sogginess. If the yogurt topping is too runny, drain it in a fine sieve for 10 minutes to thicken.
