  • 8 cups pound cake, cubed (about 1 standard loaf; store-bought or homemade)
  • 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries; fresh or frozen)
  • 2 cups heavy cream, cold
  • 1/2 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • Optional: splash of lemon juice or zest
  • Optional: fresh mint leaves for garnish

Instructions

  1. Wash and gently pat dry the berries. Slice larger berries like strawberries into 1/2 inch pieces. Set aside.
  2. Cut the pound cake into roughly 1-inch cubes. Set aside.
  3. In a large mixing bowl, beat the heavy cream with an electric mixer on medium speed until it starts to thicken. Add powdered sugar and vanilla extract, then continue whipping to soft peaks.
  4. In a separate bowl, beat the softened cream cheese until smooth. Gently fold the cream cheese into the whipped cream until combined and velvety.
  5. Layer one-third of the pound cake cubes at the bottom of a trifle bowl.
  6. Add a generous layer of mixed berries over the cake, lightly mashing some berries if desired.
  7. Spread one-third of the creamy mixture over the berries.
  8. Repeat layering pound cake, berries, and creamy mixture two more times, finishing with a creamy layer on top.
  9. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  10. Before serving, garnish with fresh berries and mint leaves.

Notes

If pound cake feels dry, splash with berry juice or lemon syrup before layering to add moisture. Use coconut cream and dairy-free cream cheese for a dairy-free version. Thaw and drain frozen berries to avoid sogginess. Whip cream to soft peaks to avoid turning it into butter.
