Easy Cheesy Ham and Cheese Breakfast Casserole

A quick and easy breakfast casserole combining savory ham, gooey cheeses, and fluffy eggs, perfect for family breakfasts, brunches, and holiday mornings.

  • 1 cup whole milk (or 2%)
  • 1/2 cup sour cream (optional)
  • 1 tablespoon Dijon mustard or yellow mustard
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups diced cooked ham
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • Cooking spray or butter for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a small skillet over medium heat, sauté the finely chopped onion and minced garlic in a teaspoon of oil or butter for 3–4 minutes until softened and fragrant.
  3. In a large mixing bowl, whisk together 6 large eggs, 1 cup whole milk, 1/2 cup sour cream, and 1 tablespoon Dijon mustard until well combined and slightly frothy.
  4. Season the egg mixture with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon smoked paprika. Whisk again to distribute spices evenly.
  5. In another bowl, combine 2 cups shredded sharp cheddar, 1 cup shredded mozzarella, 2 cups diced ham, and the sautéed onions and garlic. Toss gently to mix.
  6. Pour half of the egg mixture into the prepared baking dish. Sprinkle half of the ham and cheese mixture evenly over the eggs. Pour the remaining egg mixture on top, then sprinkle the rest of the ham and cheese evenly across the top.
  7. Bake uncovered for 35–40 minutes, or until the top is golden brown and the eggs are set (a toothpick inserted should come out clean). If the top browns too quickly, cover loosely with foil for the remaining baking time.
  8. Remove from oven and let the casserole rest for 5–10 minutes before slicing and serving.

Notes

For a fluffier texture, separate eggs and beat whites until stiff peaks form, then fold into yolk mixture before combining with cheese and ham. Use good quality sharp cheddar and mozzarella for best melt. Sautéing onions and garlic adds depth but can be skipped if short on time. Let casserole rest before cutting for clean slices. If top browns too fast, cover with foil.
