  • 1 cup pretzel twists (mini twists preferred)
  • ½ cup sunflower seeds
  • ½ cup dried cranberries (unsweetened or lightly sweetened)
  • 1 cup roasted chickpeas (sea salt variety preferred)
  • 1 teaspoon ground smoked paprika
  • 1 teaspoon sea salt
  • 1 tablespoon maple syrup
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Spread 1 cup of canned chickpeas (rinsed and dried thoroughly) on a baking sheet. Roast for 25-30 minutes, shaking the pan halfway through until golden and crunchy. Let cool completely before mixing.
  2. In a small bowl, whisk together 1 tablespoon olive oil, 1 tablespoon maple syrup, 1 teaspoon sea salt, and 1 teaspoon smoked paprika until combined.
  3. In a large mixing bowl, add 2 cups mixed nuts, 1 cup pretzel twists, ½ cup sunflower seeds, ½ cup dried cranberries, and the roasted chickpeas. Toss gently to combine.
  4. Pour the oil and syrup mixture over the dry ingredients. Use a spatula or your hands to toss everything together until lightly coated.
  5. Spread the mix out on a clean, dry baking sheet or parchment paper to let it air dry for 10-15 minutes to keep the crunch and prevent clumping.
  6. Transfer the Crunchy No-Melt Snack Mix into an airtight container. Store and serve as desired.

Notes

Make sure chickpeas are completely dry before roasting to ensure crunchiness. Do not skip the air-drying step after mixing to prevent clumping and maintain crunch. Store in an airtight container at room temperature for up to a week. For gluten-free, substitute pretzels with gluten-free crackers or extra roasted chickpeas. Maple syrup can be substituted with honey or agave syrup. Variations include adding cayenne pepper for spice or toasted coconut flakes for aroma.
