Instructions

  1. In a large bowl, combine 6 cups Rice Chex cereal and 4 cups Lucky Charms. Gently stir to blend, making sure not to crush the marshmallows.
  2. In a microwave-safe bowl, combine 1 cup semi-sweet chocolate chips, 1/2 cup creamy peanut butter, and 1/4 cup softened unsalted butter. Microwave in 30-second bursts, stirring between each, until smooth and glossy (about 1.5 to 2 minutes).
  3. Stir 1 teaspoon vanilla extract into the melted chocolate mixture for extra flavor (optional).
  4. Pour the melted chocolate mixture over the mixed cereals. Using a spatula, gently fold and stir until every piece is evenly coated.
  5. Carefully pour the coated mix into a large resealable plastic bag. Add 1 1/2 cups powdered sugar, seal the bag, and shake vigorously until the mix is well coated.
