A comforting casserole featuring crispy golden potatoes with a creamy, cheesy inside and a crunchy cornflake topping. Perfect for family gatherings, potlucks, or cozy dinners.

  • 4 cups frozen shredded hash browns (thawed, small-shred variety preferred)
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup full-fat sour cream
  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom/celery for variation)
  • 1/2 cup (1 stick) butter, melted
  • 1/4 cup finely chopped onion
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups crushed cornflakes
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the thawed hash browns, shredded cheddar cheese, sour cream, cream of chicken soup, melted butter, finely chopped onion, garlic powder, salt, and pepper. Stir gently but thoroughly until evenly mixed.
  3. Transfer the mixture into a greased 9×13-inch casserole dish, spreading it into an even layer.
  4. In a small bowl, mix the crushed cornflakes with melted butter until well-coated and shiny.
  5. Sprinkle the cornflake topping evenly over the potato mixture, pressing lightly so it sticks but stays crunchy.
  6. Bake uncovered for 45 to 50 minutes, or until the edges are bubbly and the topping is golden brown and crispy.
  7. Remove from oven and let cool for 5 minutes before serving.

Notes

For extra crispiness, broil for 1-2 minutes at the end but watch carefully to avoid burning. Pat hash browns dry if watery. Avoid over-salting as cheese and soup contain salt. Do not cover casserole while baking to keep topping crispy. Can be assembled ahead and baked next day. Freeze unbaked casserole wrapped tightly for up to 3 months.
