Instructions

  1. Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving some overhang for easy removal.
  2. Melt the white chocolate chips in a microwave-safe bowl on medium power in 30-second intervals, stirring between, until smooth. Alternatively, melt using a double boiler on low heat.
  3. In a separate bowl, beat the softened cream cheese and unsalted butter until smooth and creamy (2-3 minutes with an electric mixer or longer by hand).
  4. Gradually add the powdered sugar to the cream cheese mixture, mixing well after each addition to avoid lumps.
  5. Add the mint extract, vanilla extract, and a pinch of salt to the mixture; adjust mint extract carefully to taste.
  6. Fold the melted white chocolate into the cream cheese mixture gently until uniform and silky.
  7. If desired, stir in a few drops of green food coloring until the desired shade is reached.
  8. Pour the fudge batter into the prepared pan and smooth the top with a spatula. Tap the pan gently to release air bubbles.
  9. Refrigerate for at least 2 hours or until firm. For quicker setting, freeze for 30-45 minutes but avoid freezing for smooth texture.
