  • 3 cups cooked, shredded chicken breast (rotisserie chicken works great)
  • 68 corn tortillas, cut into strips or quarters
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1 can (10 oz) diced tomatoes with green chilies, drained slightly
  • 1 cup sour cream
  • 1/2 cup milk (whole or 2%)
  • 1 small onion, finely chopped
  • 12 cloves garlic, minced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste
  • Chopped fresh cilantro or green onions (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook and shred about 3 cups of chicken breast if not already prepared.
  3. In a medium bowl, combine cream of mushroom soup, sour cream, milk, drained diced tomatoes with green chilies, chopped onion, minced garlic, chili powder, cumin, salt, and pepper. Stir until smooth.
  4. Optional: Lightly toast tortilla strips in a dry skillet over medium heat for 2-3 minutes until slightly golden.
  5. Spread a thin layer of the creamy sauce at the bottom of a 9×13 inch baking dish.
  6. Layer tortilla strips, shredded chicken, cheddar and Monterey Jack cheese, and drizzle more sauce. Repeat layering 4-5 times, ending with a generous cheese layer on top.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove foil and bake for another 10-15 minutes until cheese is bubbly and golden brown.
  9. Let casserole rest for 10 minutes before serving.
  10. Garnish with chopped cilantro or green onions and serve warm.

Notes

Do not overload the sauce to avoid soggy tortillas. Toast tortillas lightly for better texture. Use freshly shredded cheese for best melt and texture. Cover casserole while baking to keep chicken tender, then remove foil to crisp cheese topping. Assemble the night before for enhanced flavor. Substitute almond flour tortillas for gluten-free, Greek yogurt for sour cream for protein boost, or dairy-free cheese for vegan version.
