  • 8 oz (225g) cream cheese, softened
  • ½ cup (120ml) sour cream
  • 1 cup (100g) shredded cheddar cheese
  • ½ cup (50g) shredded mozzarella cheese
  • 23 medium jalapeños, seeded and roasted
  • 2 cloves garlic, minced
  • 2 stalks green onions, finely chopped
  • ¼ cup (25g) grated Parmesan cheese
  • Salt and black pepper, to taste
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Preheat oven to 400°F (200°C). Slice jalapeños in half lengthwise, remove seeds if milder heat is desired, and place cut side down on a baking sheet. Roast for 10-12 minutes until skins are blistered and softened. Remove and let cool slightly.
  2. In a mixing bowl, combine softened cream cheese and sour cream. Blend until smooth and creamy using a spatula or hand mixer.
  3. Stir in shredded cheddar, shredded mozzarella, minced garlic, and chopped green onions until evenly mixed.
  4. Roughly chop the cooled roasted jalapeños and fold them into the cheese mixture. Add grated Parmesan, salt, pepper, and optional smoked paprika. Mix well.
  5. Spread the mixture evenly into an 8×8-inch (20×20 cm) baking dish.
  6. Bake in a preheated oven at 375°F (190°C) for 20 minutes until bubbly and lightly golden on top.
  7. Let the dip rest for 5 minutes before serving to thicken slightly.

Notes

Roasting jalapeños mellows their heat and adds smoky flavor. Use room temperature cream cheese for smooth mixing. Cover with foil if top browns too quickly. For extra crunch, add shredded cheese or crushed crackers in last 5 minutes of baking. Can be made dairy-free with alternative cream cheese and sour cream.
