  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream (full-fat recommended; dairy-free cream works too)
  • 1/2 cup chicken broth (low sodium preferred)
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup fresh baby spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Optional: 1/4 cup dry white wine
  • Fresh basil leaves, chopped (for garnish)
  • Extra Parmesan cheese (for garnish)

Instructions

  1. Pat dry the chicken breasts with paper towels. Season both sides generously with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside, tented with foil.
  3. Reduce heat to medium. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  4. Pour in chicken broth and optional white wine. Scrape the bottom of the pan to release browned bits. Simmer for about 2 minutes until slightly reduced.
  5. Slowly add heavy cream and Italian seasoning. Stir gently and bring to a low simmer. Cook for 3-4 minutes until sauce thickens slightly.
  6. Fold in chopped sun-dried tomatoes and fresh spinach. Cook for 1-2 minutes until spinach wilts and sauce is creamy.
  7. Stir in grated Parmesan cheese until melted. Taste and adjust seasoning with salt and pepper if needed.
  8. Return chicken breasts to the pan, nestle into the sauce, and spoon sauce over the top. Let meld together for 2 minutes on low heat.
  9. Garnish with fresh basil and extra Parmesan cheese. Serve immediately with your favorite sides.

Notes

If sauce gets too thick, add a splash of chicken broth to loosen. Avoid overcrowding the pan to get a golden crust on chicken. Use room temperature chicken for even cooking. Slow simmer cream to prevent curdling. Rest chicken after cooking to keep it juicy. White wine is optional but recommended for brightness. For dairy-free, substitute heavy cream with coconut milk and Parmesan with nutritional yeast. Verify broth and sun-dried tomatoes for gluten-free status.
