A warm, buttery, and tender heart-shaped cinnamon roll pull-apart bread perfect for cozy breakfasts, special occasions, or sweet snacks. Easy to make with simple ingredients and a delicious cream cheese glaze.

  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 cup whole milk, warm (240 ml / 1 cup)
  • ¼ cup granulated sugar (50 g / ¼ cup)
  • 1/3 cup unsalted butter, melted (75 g / 5 tbsp)
  • 1 large egg, room temperature
  • 3 cups all-purpose flour (360 g)
  • 1 tsp salt
  • ½ cup brown sugar, packed (100 g / ½ cup)
  • 2 tbsp ground cinnamon
  • ¼ cup unsalted butter, softened (56 g / 4 tbsp)
  • Optional: ½ cup chopped pecans or walnuts (60 g / ½ cup)
  • 4 oz cream cheese, softened (113 g / ½ cup)
  • ½ cup powdered sugar (60 g / ½ cup)
  • 1 tbsp milk (15 ml / 1 tbsp)
  • ½ tsp vanilla extract

Instructions

  1. Activate the yeast by whisking warm milk (110°F/43°C) with granulated sugar and yeast in a large bowl. Let sit 5-10 minutes until foamy.
  2. Add melted butter and egg to the yeast mixture and stir gently to combine. Gradually add flour and salt, mixing until dough forms. Use a stand mixer with dough hook on low for 5 minutes if available.
  3. Turn dough onto floured surface and knead 6-8 minutes until smooth and elastic. Add flour if too sticky, a tablespoon at a time.
  4. Place dough in greased bowl, cover with towel or plastic wrap, and let rise in warm spot for 1 hour or until doubled in size.
  5. While dough rises, mix brown sugar, cinnamon, and softened butter for filling. Add nuts if using.
  6. Punch down risen dough and roll out on floured surface into 12×16 inch rectangle.
  7. Spread cinnamon filling evenly over dough surface.
  8. Roll dough tightly from long edge into a log. Cut into 12 equal slices (~1½ inches each).
  9. Grease 9-inch round cake pan. Arrange slices standing up close together in pan to form heart shape.
  10. Cover pan loosely and let dough rise again for 30-40 minutes until puffy.
  11. Preheat oven to 350°F (175°C). Bake bread 25-30 minutes until golden brown and cooked through. Tent with foil if browning too fast.
  12. While baking, beat cream cheese, powdered sugar, milk, and vanilla until smooth for glaze.
  13. Cool bread about 10 minutes, then drizzle glaze over warm rolls. Serve warm.

Notes

Use warm milk at about 110°F to activate yeast properly. Knead dough thoroughly for best texture. Tent bread with foil if browning too quickly. Dough can be prepared ahead and refrigerated overnight. For gluten-free or vegan versions, substitute ingredients accordingly.
